I have been cooking at home for family & friends for 20 years now. My first wife, deceased, was from Milano and she introduced me to N. Italian cooking.
Why would you poke holes in the Cotechino then take it out of the pot? All of the good flavor is left in the pot! I add the poked Cotechino before the lentils and cook until lentils are done.
