Eggplant Meatballs.
Peel the skin of the eggplant and than boil it until it becomes soft not too soft. Strain all the water out you can squeeze all the excess water. Than mix all together, eggplant with grated Pecorino Romano grated cheese (as much as you want), flavored bread crumbs, salt and pepper and beat one to two eggs and add them too. You want to be able to make the shape of the a meatball so they don't fall apart. So you may need to add more bread crumbs. Use your judgment. Than fry them in Olive oil. Drain cooked eggplant ball on paper towels. You can serve them with or without red sauce.
