I made homemade ricotta cheese for the first time yesterday!

Yesterday I made Ricotta Cookies. Deliciosa! They are more like scones, came out huge and soft (inside) and only @ 156 cals a piece (without icing).
My dear Italian Man requested "no icing!" If I was serving them to guests I would...This is killing me. Nothing but rest for 5 more weeks!!!
