Meat Sauce for 1 pound of Pasta:
- 2 tablespoons extra virgin olive oil
 - 1 pound meatloaf mix, veal, pork and beef
 - 1/2 cup white wine
 - 4 cloves garlic, sliced
 - 24 ounces passata or tomato purée
 - 3 fresh basil leaves
 - 1 teaspoon salt

		Directions
- Put a large skillet over a medium-high flame and heat the oil. Add the meat to the pan and break it up with a wooden spoon until all the meat is browned. About 5-7 minutes.
 - Add in the garlic and cook until fragrant, about one minute.
 - Add the wine to the pan and cook for one minute. Make sure you scrape up any brown bits that have stuck to the bottom of the pan.
 - Add in the passata, salt and basil. Rinse the passata jar with 1/2 cup of water and add it to skillet. Bring the sauce to a boil and lower the flame to a simmer.
 - Simmer uncovered for 30 minutes
